shana tova, and excuses for baking

mmm apples.  just like peaches before them, they introduce a new season with their sudden abundance, crisp flavor, and a scent that evokes a nostalgia for the comfort of warm, hearty meals on a chilly day.  the arrival of fall also coincides with the jewish high holidays.  rosh hashanah, the jewish new year, is often celebrated from a culinary standpoint with apples and honey.  these foods are symbols of hope for the year ahead- hope that it is bountiful, blessed, and sweet.  
when i read the recipe and reviews for this jewish apple cake on smitten kitchen, it seemed to be a perfect means of utilizing the fruit of the season.  and while i may not be celebrating from a religious standpoint, i don't discriminate against holidays, the excuse for baking that they provide, or cute jewish boys, for that matter.
